Leg of Lamb

 

3-4# boneless leg of lamb

1 cup olive oil + 3 tblspns

½ cup oregano

1/3 cup basil

1/3 cup rosemary

1/3 cup garlic salt

 

In an oven ready, pre-heated, fry pan put in 3 tblspns of olive oil – sear the fat side of the lamb until brown – remove from heat leaving fat side down – mix oil and spices together and form a paste like mixture – spoon mixture over the lamb generously – turn lamb and spoon on the fat side as well – place pan into a 300 degree oven, uncovered for 1 ½ hours – turn off oven and cover lamb for 20 minutes more – slice with electric knife and push down into juice – cover and hold for 10 minutes before serving
