Fudgy’s Knockout Pot Roast

 

 

5 to 7 pound boneless chuck roast appx 2 to 3 inches thick

2 bags frozen pearl onions

1# bag of fresh baby carrots

2# of cremini mushrooms

2 large potatoes diced

5 cans campbells beef broth

1 pkg of Knorr brown gravy mix

1 phg of Knorr béarnaise mix

 

pour appx 1/3 cup of oil into in a heavy bottomed roasting pan over high heat* season roast with salt, pepper, garlic and place into hot pan* sear on one side for about 4 minutes or until golden brown* turn and repeat on other side* remove from heat and pour 4 cans of beef broth into the pan* cover with foil and place into a preheated 375 degree oven* cook for about 1hour* remove foil and add the potatoes and return to the oven for 15 minutes* add carrots, onions and mushrooms* cook for 15 minutes* place both Knorr packets into a dish and pour the remaining can of beef broth over and blend* add to roasting pan and cook for 15 minutes more* serve over rice and enjoy
