You had to enter an original recipe, and this was mine.&nbsp; There were 55,000 recipes entered and 15 chosen.&nbsp; It was a wonderful time and Southern Living was fabulous to the contestants.&nbsp; It is exceptionally easy but the flavor is \u2013 POW &nbsp;So, let\u2019s wind this one up for a very special day<br>Mother\u2019s Day<br><br>Deep Fried Pork Tenderloin with Mint Sauce Reduction<br><br><\/em><\/p>\n\n\n\n<p><em>1 \u2013 pork tenderloin \u2013 peeled \u2013 about 1 \u00bd pounds<br>2 large eggs<br>1\/3 cup of milk<br>seasoning mix \u2013 oregano, basil, garlic salt, lawrys season salt, kosher salt and black pepper<br>1 \u2013 10oz Campbell\u2019s Beef Broth<br>1- 10-12 oz jar of Mint Jelly<br>32 oz vegetable oil<br>flour<br>large zip lock bag<br><br>This is an excellent recipe and easy to do &#8212; figure on 1 pork tenderloin for 2 people &#8212; remove loins from package (usually 2 per package)\u2014you will need to peel the \u201csilver skin\u201d from the loin as this is very tough &#8212; make a seasoning mixture with the seasonings above &nbsp;\u2013 season the loins and allow to rest for about 2 hours &#8212; heat corn oil to 330 degrees, this is a deep fried item so make sure that you have a heavy pot and enough oil to cover the meat &#8212; while the oil heats, place some flour in a big zip lock bag&#8211; crack 2 eggs in a bowl and beat, drop loin into zip lock and shake to coat, put loin in egg mixture and then back in bag and shake to coat again &#8212; drop loin into the hot oil and cook for about 10 to 12 minutes \u2013 stick the meat with an instant read thermometer \u2013it should read 143 degrees when you remove it and place on a wire rack &#8212; &nbsp;allow to rest for about 5 to 8 minutes &#8212; while the meat cooks, melt a jar of mint jelly and 1\/3 cup of Campbell&#8217;s beef broth on low heat until you have the consistency of a light syrup ( just a note \u2013 I like to add a little balsamic vinegar to round out the sweetness) &nbsp;&#8212; put a puddle of that sauce on the plate and then slice the pork loin into 1\/2 inch slices ( I use an electric knife, keeps the crust intact) and place in sauce &#8212; serve with your favorite fresh vegetable or light salad and everyone will enjoy \u2013 especially your Mother&nbsp;&nbsp;
